Mojito Restaurant Expanding to New Beginnings

By Joel R. Odegard

If you have had the pleasure of eating at Mojito Latin American and Cuban restaurant in the Maple Leaf neighborhood of Seattle, then you know that the experience goes far beyond the food and atmosphere.

The owner of Mojito, Luam Werson, started working at the restaurant from its very beginning in 2001, initially as a dishwasher, and even helped with the construction of the original location located just off Lake City Way.

As the years went by, Werson, who is originally from Ethiopia, learned about Latin American cuisine through his travels to South America, and then with the help of his coworkers. In 2010, he became a partial owner of the restaurant and assumed full ownership in 2017.

Bellingham Non-profit Working to Keep The Salish Sea Healthy

By Joel Odegard, UW News Lab

The Northwest Straits Foundation makes it their mission to look after and restore the nearshore areas of the Salish Sea to ensure a healthy environment for all species.

Protecting the Salish Sea’s health involves planting and maintaining native vegetation around shorelines as well as removing shoreline armoring like bulkheads wherever possible so that the environment can shift naturally with time. Removing abandoned crabbing pots and commercial fishing nets is also a large part of the work.

Removing shoreline armoring and ensuring that these areas are full of more natural wood debris create erosion control and shelter for wildlife. Lack of woody debris and sediment can cause beaches to shorten overtime according to NWSF’s program coordinator Haley Sherman.

“Our Shore Friendly program focuses on addressing the threats of ecosystem disconnection and its impact on the food web,” Sherman said.

The NWSF hosts events where volunteers can come out and help with projects like tending to the native vegetation, weeding, spreading mulch, cutting back blackberry bushes, and assessing invasive pieces.
